baked oatmeal
with bananas and blueberries
This classic comfort food gets a new twist with a touch of sweetness from honey and fresh fruit and the warm flavors of vanilla and cinnamon.
2 cups rolled oats
1/2 cup chopped walnut pieces
1/3 cup raw honey
1 teaspoon baking powder
2 teaspoons ground cinnamon
1/2 teaspoon salt
2 cups milk (or unsweetened almond milk)
1 large egg
3 tablespoons unsalted butter, softened
2 teaspoons vanilla extract
2 ripe bananas, sliced into 1/2-inch pieces
1 1/2 cups blueberries
Position a rack in the top third of the oven. Preheat oven to 375°F.
Use 1 tablespoon of the butter to grease an 8-inch square baking dish. Combine oats, half the walnuts, baking powder, cinnamon and salt in a bowl. In another bowl, whisk together honey, milk, egg, the remaining 2 tablespoons of butter and vanilla.
Place bananas in a single layer in the bottom of prepared baking dish. Sprinkle two-thirds of the berries over the top. Cover the fruit with the oat mixture. Drizzle the milk mixture over the oats. Tilt the baking dish a few times to help the milk get into the oats. Sprinkle remaining berries and walnuts over top.
Bake until golden brown and set, about 35 to 45 minutes. Remove from the oven and let cool for a few minutes. Drizzle with more honey, if you wish. Also delicious served with a dollop of vanilla Greek yogurt.
