Dandelion is a rugged member of the aster family easily recognized by
its sunny flower head and toothed leaves. The herb is supported by a
long, thick taproot, which is harvested at the end of the growing season
when energy is transferred to the roots in preparation for winter.
The root of this plant has long been used to brew a hot beverage and
coffee substitute, although it’s also been used to produce soft drinks.
Due to the potential stimulatory activity of dandelion root, check with
your doctor before using if you have a history of gallbladder disease.
