These healthy snacks are similar to fruit rollups and making them will require a food dehydrator. If you don’t have one, it’s worth the investment because you can dry your summer garden herbs quickly and make dried fruit and jerky year-round.

4 cups pumpkin puree
½ cup sugar
1 ½ tablespoons pumpkin pie spice mix
Cornstarch for dusting

Combine all ingredients in a large bowl and stir well. Spread mixture evenly on drying trays and process until dried. (The leather is ready when it pulls away easily from the tray.) Dust lightly with cornstarch. Roll unto a tube and cut into serving size pieces. Wrap in plastic wrap and store in a cool, dry place.
